Pink salt earned its place in professional kitchens for reasons that have little to do with the wellness claims attached to it at retail. It finishes well, it presents well on a plate and a pass, and a salt block on a grill is a genuine point of difference on a menu in a way that almost no other ingredient at that price point manages.

 

What holds operators back is usually supply rather than interest. Pink salt bought through retail channels costs several times what it needs to, arrives in packaging designed for a shelf rather than a kitchen, and varies enough between orders that a chef cannot rely on it. Cooking blocks bought without selection crack during service, which turns an attractive piece of theatre into a hazard and a replacement cost nobody budgeted for.

 

Buying direct in bulk changes the arithmetic entirely.
